It’s Easter weekend, and as much as I love going ALL out on every Holiday I’m feeling pretty drained. I finished all the Easter baskets about a month ago and decorated some eggs for my birthday giveaway, after that, I don’t even feel up to Easter brunch. BUT, I’m still trying to maintain the magic for the girls so I’m doing some SUPER easy Easter breakfast and sweets and I wanted to share!
- Coconut Macaroon Nests– I’ve seen these on Pinterest and have always wanted to try them. This Easter is perfect because they happen to be my husbands favorite cookie and his Birthday falls on Easter this year. So, instead of a cake, he’s getting these adorable cookies. The recipe is from my mother in law and I usually make them at Christmas time with a maraschino cherry in the center. I used the same recipe but used malted milk robins eggs and mini Cadbury eggs to fill the nests and make them Springy. All you need is 1 bag of coconut, 1 can of condensed milk and 1 tsp of Almond Extract. Mix them all together and bake at 325 for 20 min. I baked them in mini muffin tins and it worked perfectly. Use LOTS of Pam they are sticky!
- Bunny Butt Pancakes– Last year I did a whole bunny, this year I went with just the butt (mostly to fit on these adorable daisy plates from Ellie and Piper) but they turned out so cute! Just pancake mix, whipped cream for the tail and sliced banana for the feet! You can see last years version here! - Easter Candy Board– I found this idea through several bloggers on Instagram and I thought it was SO cute and had to try. It couldn’t be easier, just style all that Easter candy how you would a cheese/ charcuterie board, and there you have it! I’m using jelly beans, pastel Jordan almonds, Egg Reese’s cups, lemon biscotti, and Peeps! I added my nest macaroons and chocolate bunnies, then finished the board with carrot napkins from Ellie and Piper. I used my bunny candy dish, a cupcake stand and mini latte bowl from Anthro to add some height and dimension. No one is really getting candy in their baskets this year, so this is plenty of sugar for everyone, can’t wait to dig in!
